Goat on a Boat
SPRING FEAST RECIPE: WEEK OF UNLEAVENED
Preheat oven to 375°.
Wash zucchini and slice off both ends. Slice the zucchini in half lengthwise and place face up in a roasting pan. Sprinkle with cheese, oregano, salt, and pepper. Roast uncovered for 10-15 minutes or until tender.
I personally prefer shredded goat cheddar cheese for the goat on a boat recipe, but sliced cheeses would work as well.
