Arise Banana Bread

Exodus 23:14 – 15

Preheat the oven to 350°F. Grease a 4½ × 8½-inch loaf pan.

In a large mixing bowl or stand mixer, beat melted coconut oil, eggs, banana, sugar, and salt. Gradually add the flour until well-blended and combined.

Pour the batter into the greased loaf pan. Using your finger, insert the chopped figs into the top of the dough approximaley a ½-inch deep (don’t press in too deep).

Bake the bread for 40 minutes until you can insert a toothpick in the center of the bread that comes out clean. Let the bread cool in the pan for 10 minutes, then unmold the loaf and let it cool on a rack. Slice and enjoy!

Note: This banana bread will be dense, and is great for toasting! We especially love eating it with mixed berries on the side and a cup of herbal tea.

Try as muffins: Just pour batter into a greased or lined muffin pan instead. Check to see if it is done at 30 minutes instead.
They can be stored at room temperature (covered with plastic wrap) for up to 3 days.

As the bread bakes, the figs will push up and rise to the top!

We love this recipe and use it as a conversation starter to talk about Yeshua’s resurrection. And, as a bonus, to incorporate the children, be sure to read or listen to our LKP Scripture story: “Yeshua to the Rescue: Exodus from Egypt.” Shalom!
