Arise Banana Bread
Exodus 23:14 – 15
SPRING FEAST RECIPE: WEEK OF UNLEAVENED
Method
Preheat the oven to 350°F. Grease a 4½ × 8½-inch loaf pan.
In a large mixing bowl or stand mixer, beat melted coconut oil, eggs, banana, sugar, and salt. Gradually add the flour until well-blended and combined.
Pour the batter into the greased loaf pan. Using your finger, insert the chopped figs into the top of the dough approximaley a ½-inch deep (don’t press in too deep).
Bake the bread for 40 minutes until you can insert a toothpick in the center of the bread that comes out clean. Let the bread cool in the pan for 10 minutes, then unmold the loaf and let it cool on a rack. Slice and enjoy!
Note: This banana bread will be dense, and is great for toasting! We especially love eating it with mixed berries on the side and a cup of herbal tea.
Try as muffins: Just pour batter into a greased or lined muffin pan instead. Check to see if it is done at 30 minutes instead.
They can be stored at room temperature (covered with plastic wrap) for up to 3 days.

We got a question on this recipe that we thought would be an important addition.
Shalom. I attempted to make this recipe. There were just a few things off. Can you use vegan eggs with this recipe? If not, then what else would you suggest? Also, if the bananas are too ripe, would it cause the bread not to bake in the middle? Thank you.

Einkorn flour absorbs liquids slowly. With that in mind, I don't think you'll have a problem with the bananas being overripe. In reference to vegan eggs, I have substituted apple sauce in the past, anywhere from about a quarter cup to a half a cup. Also, be sure to use a flat, straight edge, like the straight back of a knife, to level off the top of your flour. Hopefully that helps. Keep in mind this is going to be a dense bread, perfect for toasting. Shalom and enjoy.
